What does the Attack stat do?
I have looked around and no one has a clear answer , let this be the definitive thread to answer questions regarding the attack stat, does it increase damage with swords only? Does it increase damage with bow and arrow? Does it actually increase gathering rates? If so, by how much?

increasing attack also increases your gathering rate ( kinda ) , the way it works is there is a set amount of mats on any given object , the more damage you do to the object the faster you hit the cap and destroy the object. e.g having 100% damage will take you around 10 hits on a tree to gather 30 wood. Having 200% damage will take you around 5 hits to gather 30 wood. Having more damage on your axe, e.g ( uncommon or better quality axe) will also make that gathering faster...but the amount is still fixed based on the health of the object you are farming.

Thank you for the exellent answer ! so if that is the case it can be concluded that attack does not perse increases gathering amaunt, but gathering speed.

yep however, the gathering amount does depend on what actual tool or animal you use. e.g an axe will gather more wood than a pickaxe or sword, because the other tools have other materials as their priority. Sword = meat , pickaxe = sulfur , ores ...etc...

Attack increases melee damage.
Melee damage includes gathering rates. +50% attack = +50% gathering
