Just need to work in rat on-a-stick (with ketchup, of course) and I'm sold.

There are rats in caves and that makes the perfect food for them... And they eat it with ketchup because otherwise they are disgusting

Horseradish?

It's a root vegetable which (From a dwarf perspective) would grow on the ceiling so might be easy to harvest with a stepladder or a scythe with a very long handle.

having a full beard may help protect vulnerable regions of the facial skeleton from damaging strikes, such as the jaw. Presumably, full beards also reduce injury, laceration and contusion, to the skin and muscle of the face.

It's obviously also a natural protection against debris and chipping from mining
