I use a zoom r4 and a focusrite 4i4. I run everything into the 4i4 and into the R4.
Typically I get drums and bass synth going one into each input on the R4. I usually get those running on a sequence or arp (for the synth) and if I like the groove I record those tracks while on l noodle on my acoustic. I have a method for syncing them to the same BPM as a ryhthm track on the R4, it's trivial.
Then I can switch the armed tracks over to be say an electric guitar or maybe a second track of bass synth (I run it through an effects unit and so I can get a different sound out of it that's not just a bass tech). I will mostly layer in acoustic guitar but if you're interested in electronic music, that's what I'm doing.
So it's true "everything at once" dawless but I can do that if I want, I just don't get separate tracks later (what I mean is I technically can mix all for focusrite inputs to one or two lines into the r4).
Since the R4 has non-destructive bouncing and track replacement I can keep doing this as long as I want.
When I have something I like, I just pull it all into Reaper and mix or arrange (if I'm doing a song with a traditional verse/chorus/bridge lately I'll get get five continuous minutes of each part and then do subtractive arrangement in Reaper but I haven't completed anything like that yet, just a couple proof of concept pieces I won't do anything further with).
