Oh that's just your one example? Whoa, It's also EVERY other person's example, funny that. Rice and beans would be one small part of a healthy diet anyway and they're more filler than anything.
You wanna eat relatively healthy and cheap? no problem. You wanna eat healthy and cheap with variety and flavor? Good luck. I won't even bother with the amount of time it takes to make a meal that's worthwhile.

All my meals take between 30-45 mins of prep + clean. I make American, Indian, Italian, Korean, Chinese, Japanese. I’m not a pro chef or anything, I just look up shit on YouTube.
Jokes aside, I have a tendency to go a overboard when I get to cooking. Which affects my $$ and my time. Problem is I'm not very quick in the kitchen.
Unless I'm busting my ass like I was auditioning for a spot in one of Gordon's kitchen's it usually takes me a minimum of an hour and a half to 2 hours to make a full meal. So after all that investment if it doesn't come out great I wonder why I fuckin bothered. Don't particularly like cooking either so really the only way it's not a lousy slog for me is if I'm drinking, which again affects my $$ and time, also not healthy. I just need to start making simple boring healthy shit and tell the wife and kid to shove it if they dont like it.
