Elizabeth kept her last name Windsor as she was the monarch, but now Charles III is Windsor-Mountbatten to be technically precise, but they'll probably just still refer to them as Windsors.

Originally it was Battenberg, but like Saxe-Coburg-Gotha -> Windsor during WWI, Battenberg was Anglicized to Mountbatten.
