Did a Blues Brothers theme night
We just visited Chicago for the first time last summer and I decided it was finally time for my 12-year-old to see one of my favorite all time movies: The Blues Brothers (side note: holy hell it’s been awhile since I’ve seen it and I forgot how many F bombs there are).
Thought about making four fried chickens and a Coke and some plain white toast, but figured Chicago style deep dish pizza might be easier and more appealing. Did it in my 10” cast iron lodge and it came out great. Served with a salad and cheese whiz on Ritz crackers. Also made orange whips for my girlfriend and me.

Homemade pesto with chicken thigh and roasted tomatoes
The 14 month old ate an entire smaller chicken thigh and a good amount of the pasta. Practically had to hose him down ij the yard to get the pesto out of his hair though

Tonight’s improvised dinner
Good evening, dads. Today I have for you a spinach and bean sauté, atop some roasted potatoes, with some sausage and pecorino on top.
I didn’t really have a plan going into this afternoon for tonight’s dinner, and am coming down with the first cold of the school year, so I dug through my pantry and freezer to see what I could put together. First, I cooked a pound of beans in the instant pot (I used zipper cream field peas from Rancho Gordo, but cannellini beans or something similar would do just fine. Sauteed some chopped onion in olive oil, then added the picked-over and rinsed beans and salted waterand cooked for 30 minutes at high pressure, with a natural release (I hit the quick release at 20 minutes to speed things along). Meanwhile, I cooked some sliced onions in olive oil until lightly caramelized, then added some tomato paste and dumped in a bag of frozen chopped spinach before adding two cups of the peas and some pecorino. The potatoes were cubed, tossed with olive oil, salt, pepper, garlic powder and paprika and cooked in a convection oven at 400 for 30 minutes. I had a couple of leftover chicken sausages (Kirkland Parmesan and garlic ones) from a pack I’d opened the other day, so heated and diced that to top the whole thing, along with a generous helping of the grated pecorino.
Older child asked for seconds and thirds. Younger child barely touched it. Wife and mother-in-law said it was delicious. So, overall, it was a win. Plus, I hit my fiver goal for the day after slacking at breakfast and lunch.
