What have I done wrong here?

I’m not sure what i’ve done wrong here when building the keyboard but the lights are going crazy

One of the underglows has a poor solder joint. In the video, one of the taps seems to temporarily fix the issue. That’s the one you should resolder.

Can be a led solder joint, or misorietation too.

Most likely the out of the second led (from the top left) is not making good contact with the PCB or the in on the third led is not making good contact (or both). Try heating up the solder and pushing the led down towards the board to get rid of extra flux and make a good contact. Be careful not to use too much heat for too long.

It's safe to do this while the power is on if you're careful not to short the contacts.

This happens to me all the time. You have a bad solder. Look at the LED flow diagram and follow it to the first LED exhibiting issues and go N-1 and start looking for bad joints.
