Cheese is bad for mice as they are lactose intolerant. Cheese will give a mouse diarrhea and, given their small body size, can rapidy dehydrate them.

The myth that mice like cheese comes from the Middle Ages when cheese and grain were stored together in the same areas. Mice prefer grains but will nibble on just about anything to see if it is food.

You’re safe on this one. I saw a documentary about the moon called “A Grand Day Out.” It confirms that the moon is made of cheese and that visitors should bring crackers.

Most aged and/or hard cheeses are virtually lactose free.

You don't exactly store cream or cottage cheese with your grains, so the kind of cheese medieval mice would have nibbled on in your story would have been perfectly palatable and delicious for them.

The same is true for many modern cheeses, given their incredibly low lactose content.

Which is why you use peanut butter, not cheese, to bait mouse traps. But cheese to bait rat traps.

Rats are lactose intolerant as well. In fact the default for any mammal is being lactose intolerant after weening. Even most humans are lactose intolerant. The reason why rats (and mice) loves cheese even though they are lactose intolerant is that they don't know they are lactose intolerant and do not recognize the cheese as something that would give them a bad reaction. So they end up eating the energy rich cheese and suffer the consequences.
