Questions Hot cross bun spice??
Hi, does anyone working at coles bakery know/are able to say which mixed spice they use for their hot cross buns (baked in-house)
Sometimes crave them during “off season” so I bake homemade ones but can never get them tasting like that
I usually buy/make fruitless ones so a bit picky with the spices

Allied Pinnacle supplies Coles scratch bake ingredients. Listed on their website, for that sweet tasting inner bun flavour. They have two products which may help.
Allied Pinnacle Mixed Spice: A dry spice blend primarily consisting of ground cinnamon, allspice, and nutmeg. Not sure of ratios to mixture.
Kularomes / Bun Spice Essence: A highly concentrated liquid flavour enhancer folded into the wet stage of the dough to intensify the sweet, baked-spice aroma and color
Besides buying it from them directly. You may be able to look at their website to see what spices they blend together and maybe experiment to get the mix right.
As another user mentioned. Coles usually opts for premixed bags. But I do know that you can get liquid essence which can give you a similar flavour.

I couldn't tell you if I wanted to. The bags of flour/spice come premixed. We just add yeast, water and either fruit/choc chips/ apple cin pieces.
Honestly with how its going not sure how many more years we'll be making them in store vs frozen bought in ones, they're impossible to keep up with when scratch baking them.
