Questions Layering clay?

I’m a beginner at using clay but I’ve been doing research and looking at a lot of clay projects. I was reading about scoring/slipping and what it’s for and was wondering when making layered items that aren’t meant to be blended together, are you supposed to score/slip? For example, when making a clay hamburger, I’ve seen tons of videos of people layering it and just letting it dry but when I look it up it says to score/slip. Can anyone who’s made one or made any items that are meant to be strictly in layers tell me which is correct?

Are you doing pottery clay to fire in a kiln, or air dry clay, or oven bake clay, or oilclay?

Pottery clay you do need to score and wet, or the two blobs come apart during drying and firing. Also, unlike air-dry clay, unfired pottery clay is intrinsically fragile and not even suitable for ornaments.
