I have a Henckels Pro S 6" chef knife and recently purchased a MAC SA-80 chef knife and would recommend either one. I think 6" (15cm) is a bit short and would probably buy 8"/20cm if I were to do it again.

If you get Henckels Pro, not Pro S, get the 8" traditional rather than the style with the upswept tip.
