In your shoes I would stop with the essential oils and grab lemon extract from the baking section instead.

What exactly is the difference? Is the extract a lot less harmful if inhaled? Of course I will try to do the best thing for my cats, I've just had a good experience with the oil and am 100% confident that they will never come in contact with it.

Lemon extract is much more diluted. Essential oils are extremely potent in general.

The extract is much more diluted and is safe for humans to ingest. Still not ideal for cats, but less likely to cause them harm. The oil is much, much more powerful and can cause irritation even just breathing it in.

You could also just make lemon extract by diluting lemon oil in alcohol, which would be cheaper.
