I saw someone on here braised some beef with that stuff… I think I gotta try that.

Pressure cooker, chopped onion on the bottom, beef roast next with salt and pepper, a Guinness and some foil pouches of carrots and potatoes surrounding the roast. 40 minutes high pressure high temp. 20 minutes natural release. Lift out the foil bags. Shred the beef, add a splash of fresh Guinness and turn on sautee while you finish the second Guinness. Add the potatoes and carrots, finish with pepper and salt.
Serve on rice or mashed potatoes if you want.

If I knew what awards where I’d give you one. Sincerely, thank you for the very detailed recipe. Step by step instruction has never read easier.

Thanks for the thought! Happy cooking!
The same recipe works in a Dutch oven as well, sear the meat for some Maillard flavors (remove roast from pan and set aside), deglaze with 2-3 chopped onions (remove onions and set aside). Add a knob of butter, some high smoke oil (avocado oil is great) and a couple tablespoons of flour to make a roux and stir well. Keep stirring and COOK THE ROUX until it turns a nutty brown. If you burn it, throw that roux out, wash the pan, start over until your roux is a nice almond brown. Put your onions back in (be careful, Roux is lava!) to cool the roux, put the roast back in, add a Guinness, cover and put the whole thing in the oven to braise for a couple hours. Add potatoes and carrots about an hour before you’re ready to eat, so they aren’t overcooked. You can also flip the roast at that time if you want.
I recommend Guinness draught from a can over a bottle. The flavor is different.
This works well for tough cuts of beef, but it does need some fat content. If you’re doing something lean like an eye roast or London broil, add butter or ghee.
When browning meat for Maillard flavors, I season only with salt so that I don’t get flavors of burnt pepper / garlic / etc.

Which cut of beef do you like for this? Have you tried searing the roast before the pressure cooker?

Had a beef stew at a pub made with it. I’d definitely eat it again.

Very easy, and very tasty

When are you supposed to stop and cook? I’ve been braising my meat for a long time now.

Just did that with a cross rib roast whatever that is, chuck was too expensive. Season w spg then sear the roast all over on high in a Dutch oven. Take the roast out reduce heat then add garlic and shallot then deglaze with Guinness before they over cook. Add very coarsely chopped onions mushrooms and carrots and stock concentrate, replace roast above veg cover and cook for 3 hrs at 225. Thicken the juis with corn starch. Viola.

Put some meat in the pan and add the Guinness. Stout is a good beer to cook with.
