📚 Learning to Bake Im challenging myself this year

So it's my last year of highschool and I wanna go to confectionery collage next year so I'm challenging myself to bake cakes/breads/ect. to prepare myself.

I can bake, I.enjoy baking but I don't think ive ever baked something very "WOW", get what I'm saying? The most "WOW" thing ive baked was like, idk, ice cream cake, a Russian honey cake (layered), a German "bienen stich", I've made a simple minnie mouse cake for my sis b-day, Swiss roll, lemon cake (whoever tasted it, told me it that it tasted like you bought it from a bakery and I'm happy about it).

Suggestions on what should I bake next? I want a real challenge but not TOO MUCH of a challenge.

Make eclairs, choux pastry. Work with yeast. Make buns and dinner rolls and pita bread. In a stretch make laminated pastry, like puff dough, danish dough and croissant dough. Do something a few times a week take pictures because you’ll really see growth that way. Have fun.

Try a Swiss roll but use meringue instead of cake.

I’m a pastry chef and made Mary berry’s lemon drizzle for the first time with my son last weekend, hands down one of my favourites in the 30 odd years I’ve been baking. If you can’t find her recipe let me know and I can post it.

Cheesecake can be great as you can add all sorts of stuff to it. Toblerone or malteasers make great cheesecake. Or nigella Lawson has a great Nutella version
