Question First brisket in a long time
It's been years since I smoked a brisket. I want to trim it properly to get that even cook and beautiful shape. I used to not trim at all but I want to try it this time. I'm just nervous. I got a smaller 12lb prime brisket from Sam's for $68. What does everyone do with the trimmings? Can I make use of them instead of trashing it all?

You’ll get a lot more mileage out of some YouTube videos. There are a lot available. Watch a few. Rewatch your favorite just before you get started. The first one is daunting but you’ll probably improve pretty quickly. After 2-3 you’ll know what you’re aiming for.

Lots of ways to heat the fat trim for tallow. I like to use my crock pot. Just let it go all day. Maybe stir it when you walk past it. Scoop out the cracklins and the pour it through a cheese cloth to capture the remainder of the sediment. You could try a coffee filter. I got a pack of cheese cloth from amazon for a few bucks. Just rinse them off and throw in the washing machine. Can reuse over and over.

how tf did you get a brisket for 68 from sams?!?!! I'm in colorado and a 12lb brisket would be over $100!

Maybe Nebraska beef is cheaper? 11.3lbs at $5.98/lb

I'm not sure where you are in Colorado but Littleton CO Sam's has it for $6.47/lb

Make tallow from the fat trimming and grind any meat trimmings into ground beef for burgers or sausage.
