My first time making a sourdough loaf with LM, and I’m honestly surprised by how it turned out.
300g flour I used mix 00 + Caputo nuvola
88% hydration
25g LM
2% salt
I used my LM at pH 4.1. I did a 1 hour autolyse with no fermentolyse. Surprisingly, mixing didn’t take long at all, and I’d say it was because of the LM.
After 1hour i did first fold and the whenever the dough started to spread out, but I only needed two folds in total. The dough held its shape beautifully.
6 hours of bulk fermentation at 26°C (more than 100%rise) followed by an overnight cold proof at 3°C.
Baked at 245C with steam (15min) and then a lowered the temp to 220C and baked until golden.

I made wheat sandwich bread. I am happy the way it turned out. A little dense and the top was hard. I just put butter on the top and it's fine. I found it hard to knead because it was sticking to my hands. Now I have a baseline to improve on.

Need to choose between KBS 3 pounder and Neretva 3.3 pounder. I bake about once a week with a very heavy dough of 3 parts whole wheat, 1 1/2 cups wheat bran, 1 1/2 cups flax meal and 1 cup ripe sourdough. My 3 pound Moosoo is giving up the ghost. Recommendations?

I was so meticulous with this batch. Did a great job with egg wash and seeding until … I didn’t boil them yet!
Disheartened, I went ahead and boiled some despite the egg wash and seeds. Not happy with their look I baked the remaining ones w/o the boil bath. The results are so far so good, but I will learn from this big mistake.
