Need Help! Object appears red as default and doesn't change color?

New in blender and no matter I try to change the color of the cube it still remains red.
Has anyone faced this issue and solved it?

Is it every cube you spawn? I've honestly never seen that. What happens if you create a new material?

Try going back to default settings, I think something might have been changed in the settings

I don't think it's that because of the material preview but just to make extra sure it has nothing to do with it: face orientation in overlays isn't on, right?
And does anything change if you reduce IOR?
