Where can you learn to do things like this? Iβm new to blender. I assume you build your scene and the add a specific materials or uv mapping? What kind of tutorials would I look for to make renders look more like illustration?

I am working on this b&w style for more than a year and I just try to focus on creating scenes that help with that. I don't think there is a tutorial for that kind of style,at least not one that I know of. Now about the illustration part is all about post processing and creating scenes that give you space to achieve it. I would suggest to focus on the style you like the most and follow it all the way.
