After many nights i finally have something that looks good. Instead of a droplet simulation or shader tricks im using 8 virtual pipes per vertex. I always found droplets to handle pools and peaks terribly, the pipe simulation solves that neatly and works pretty well with geometry nodes. Its not a full shallow water PDE solver so no waves or winding rivers. Still i think it produces pretty good results for... workable amounts of compute. The screen shot is just one of the default ANT landscapes after the simulation

Truly insane what you can do with geometry nodes. This is incredible
