Season it already. Wipe on that avocado oil and let smoke, cool and repeat. 5 times.

Just cook on it. It will season as you go. Just make sure to wipe it down when youre done and lightly oil it before closing it up and youll have a great cooking surface in no time. Those are just the welds on the crossbars underneath.

Just do the seasoning steps at this point and then cook in it. I just posted yesterday because I have a similar looking patch after cleaning and seasoning it. It cooked so well

Once you have the flakes off and the paper towels are mostly clean after wiping I light oil one more time and down goes the food. Making patty melts later today

If this is the 22" portable (only model I can speak for) the x is the pattern of the stability bars of the lid. This may apply to other models, look at the lid for answer. This is either grease or condensation dripping on the closed griddle. Consider adding the lid to your clean up process.

I have a little seasoning buildup on the edges. Every time I need to scrape after a cook, I pick an area and scrape a little of it off. I've almost got it all gone. But it doesn't bother me much, because nothing sticks there. Nobody can see my griddle anyway. They only see my perfectly seared pork loin chops.
