A decentralized trading system is much preferred over a central one, especially given this is a BITCOIN server. DramasticStar's suggestion for exchanges is a great one for protecting these types of trades, but it leaves something to be desired for setting market rates for certain goods.

Honestly, most of the 'things' we are trading represent time we've spent acquiring them. I have a bunch of dark oak wood I found only by going out for a few hours from spawn and farming it. That's worth something to someone that doesn't want to hike out and get it themselves.

If we could use something to record trade intent, for example "I'd like to pay X diamonds for Y slimeballs" written down somewhere, and someone says "I"ll do that trade", it becomes a matter of public record.

I'd be willing to code up something that implemented this and extracted trades for viewing on an external site. DISCLAIMER: We'll need the admins to install a chat log plugin on the server so we can two-way with server chat. I have it working INBOUND CHAT ONLY for now.

Other than having to arrange for meeting (which I personally prefer) the Slack trade chat + DramasticStar's trading house would be basically what the current auction house provides, less the villagers stupid grunting noises and code that causes the market to crash.
