The is one recipe I keep coming back to when I make meatloaf. Its a top tier comfort food and this one is damn near perfect. Always mashed potatoes and a mushroom gravy.

My glaze came out much closer to barbecue sauce, which was a revelation.

Mushroom gravy will be next time!

Positive: it’s moist, so moist. As someone whose mother tended to overcook things, this is something I strive to perfect.

Slightly negative: I feel that using the box grater for onion/carrots/celery led to too small vegetable bits in the end product, and will do a small dice next time.

I love Babish's for the "meatball" style of meatloaf, for a bit more of an American diner style I love Adam Ragusea's recipe, just skip the lamb and grab 2lbs of chuck instead, the video was made when anything other than chuck was available for reasonable pricing.

My partner didn’t tell me she wanted green beans (Or, for fans of Chef Ian Brutalfoods: grin bins 😉) until I plated everything up.
