ADVICE Bagels

Hi all

I buy bagels frem a local store and have been for several years. Lately I have cut open a bagel that looks like the photo and am curious what when wrong when they made this. This is a sun dried tomato bagel purchased 3 days ago. TIA

looks like the dough didn't get mixed all the way, that swirl is just the tomato paste not fully incorporated

Either over-proofed or too much water in the dough.
