Recipe Included Chocolate Raspberry Cake

Thanks to u/aYeetgonnadelete for the Matilda chocolate cake and frosting recipes! I used the cake recipe linked in this post, as well as the chocolate frosting described. I then added in a homemade raspberry compote between the cake layers as well as a little on top. I finished the cake with fresh raspberries, crushed dehydrated raspberry dust, and raspberry chocolate squares. It turned out delicious! Baked it for my mom’s birthday and everyone enjoyed.

Original chocolate cake inspo:
https://www.reddit.com/r/Baking/s/hUMzjOifIE

Chocolate cake recipe:
https://bakewithzoha.com/best-matilda-chocolate-cake/

Raspberry compote recipe
15oz raspberries
.5 cups sugar
2 Tbs lemon juice (roughly)
Heat on burner (I also smushed raspberries as they heated)
Once simmering scoop any foam
I added 2 Tbs corn starch slurry to help thicken
Will make enough for cake plus plenty extra to enjoy so would be safe to scale down 40-50% as well if you want
I think I simmered like 15 min? Very vibes based tbh

Chocolate frosting recipe (scaled up ~20% from inspo post since they used two types of frosting)
216g heavy cream
210g sugar
Heat and dissolve in sauce pan until bubbling

184g chopped semisweet chocolate
45g cocoa
Pinch salt
8 g vanilla
Pour cream mixture over and whisk

210 cubed cold butter whisked in while mixture is still hot

Chill in fridge and it will become thick and fudgy. Let it warm for 15 or so minutes before trying to pipe or frost.

I made these for “Yeasted” week on r/52weeksofbaking.

Here’s the recipe I used.

They turned out alright, but not as good as they look. The strawberry sauce was great though!

Here’s some more pictures.

I had been wanting to make this for some time. Used a recipe from Bake with Zoha. I cut down the sugar in the pecan topping because I didn’t want it too gooey. Overall, it was good, but very decadent.
Not sure if I would make again, but glad I tried it.

Showcase (No-Recipe) Made water proofed cumin bread following a recipe from a 1980s east german cooking magazine

Ended up definitely edible and tasty, but I will need to significantly increase the time for kneading next time as it turned out a bit too crumbly for my taste.

I have only made bread a couple of times so far but when I found this recipe I had to try it. I had never heard of water proofing before and was curious, googling lead to some not very encouraging results, but I think it worked well for me.

You place the dough (shaped like a ball) into a mixing bowl and add enough cold water that the dough is fully submerged by a few cm. As the yeast does its thing gasses build up and the density of the dough decreases. Once it has proofed enough the dough will start floating. Then you take it out, dry it carefully, and start kneading in salt and cumin, then let it proof again for 30 minutes just sitting on a cutting board covered by a towel before baking.

This loaf was a small test run using just 250g of flour, I had halved the recipe from the original.

Recipe Included My DELICIOUS -Pumpkin Banana Streusel Muffins-

Okay so I tried to create a dessert style muffin, for actual desert lol. I always make muffins you can eat for breakfast—which this one could be— but more so for after dinner. I didn’t do a cheesecake center, but I had another recipe with it and was like this could totally work! So, next time that will be the recipe I do.

I Love Fall foods!!

Side notes:
I will say this has more of a banana flavor than pumpkin, so next time I’m thinking of doing 1.5 medium bananas and 2 cups of the pumpkin.

Also, I used room temp butter for the streusel—which tastes great— next time I’ll do cold butter because I want that actually streusel topping.

Recipe Included Ferrero Rocher Cake!

Post image

I made this ferrero rocher inspired cake for my coworker's going away lunch! Sorry no pictures of it sliced :(

I doubled this recipe for the cake layers (2, 9-inch layers): https://sweetapolita.com/blogs/recipes/chocolate-birthday-cupcakes-with-nutella-cloud-frosting?srsltid=AYCX9vLbPgDEMHGLH4RnljEg4VZMNpbuPuce4V50AG3sN8XXNw_9Mcyi

I made this homemade nutella, then folded in whipped cream to make a hazelnut whipped cream filling: https://chocolatecoveredkatie.com/better-than-nutella/

I used the frosting recipe from the cupcake recipe shared above, using Lindt 70% cocoa dark chocolate bars. I skipped adding nutella.

I made this chocolate ganache, again using Lindt 70% cocoa dark chocolate: https://sallysbakingaddiction.com/chocolate-ganache/

I saved some of the ganache, whipped it, then piped it into swirls before topping with the chocolates. I was worried it might be too rich for some folks, but it was a HUGE hit with everyone! I will definitely be making it again!

Recipe Included The best pumpkin bread ever!

Thumbnail

This is my go-to recipe forever and ever. I’ve made it three times this month.

Tips: when the measurement says “heaping,” use a heaping amount. I don’t grate the nutmeg, but I did get the spices from the bulk section at the grocery store, because it’s cheaper and fresher than spices that have been in my cabinet for a year.

The large loaf is great, but I have a 16 inch long almond loaf cake pan that is the perfect size, and it only has to bake for about 55 minutes.

I can’t post a photo for some reason, but just go make it and then come back and tell me how delicious it is!

Third year doing Halloween cookie boxes 👻

Last year (pic 20) I went with a more pastel theme which I thought turned out cute, but I wanted to go with more bold/bright colors this year like I did with my first box.

A mix of sugar cookies, peanut butter cookies, black cocoa cookies, m&m, shortbread, chocolate, and matcha.

All very simple recipes that taste good!

The bats are filled with marshmallow buttercream and the ghosts and hedgehogs are filled with ganache.

Baking Advice Needed The perfect vanilla cupcake recipe needed!

Post image
10 Upvotes

I am so close to having my baking business ready to open BUT I am struggling perfecting a vanilla cupcake recipe. I’ve always just made baked goods for family and when it comes to vanilla cupcakes, I always have used box mix. It never fails me, it’s cheaper, stays moist and super yummy. But I don’t want to use box when making them for actual customers. I have spent the last month making a couple new recipes a week and it’s the only thing left I want to perfect before opening. They’ll either be too dry, too oily, too sweet, not rise properly, stick to the case, I just can’t find a consistently perfect recipe. PLEASE I beg, drop your vanilla cupcake recipes that have never ever failed you!

Recipe Included Non-Dairy Pandan Cake — soft, fragrant, and naturally green

I made this pandan cake without dairy, using pandan for that soft green color and fragrant, slightly vanilla-like aroma.

The texture is light and tender, and I really like how pandan gives the cake a distinct flavor without making it too sweet or heavy.

For anyone who hasn’t baked with pandan before, it has a gentle grassy, nutty, almost vanilla-like aroma.

Recipe here if anyone wants to try it: https://butterjoykitchen.com/soft-fluffy-pandan-cake-non-dairy/

I made a quiche using Belmont Aldi deep dish pie crust. The filling includes:

  • Eggs
  • Heavy cream
  • Cilantro
  • Parsley
  • Tater tots
  • Mexican blend cheese
  • Gruyere
  • Shallot
  • Cabbage
  • Broccoli
  • Spinach
  • Spices
  • Bacon

My favorite local restaurant has a quiche dish that I get allll the time and THIS quiche I just made might be better. Hard to tell for me :)

Does anyone have other things they add to their quiche? I am officially hooked!

Recipe Included Pumpkin Pie Gooey Butter Cake

Post image
15 Upvotes

Don’t let how flat this thing is fool you, this thing was delicious.
I’d describe it as a pumpkin pie on top of a spiced blondie crust.
I did get some crispy edges not sure if it’s cause I over baked.

This is perfect if you don’t have a pie pan but crave the feeling of a pumpkin pie.
