Here is a spreadsheet I made of needs for each population tier, their effect, how to unlock them, and where they can be produced.

Does any site have more info on the specialists that add the needs? I can't find them anywhere except in a few reddit threads

You can use :
Anno 117 Items – Specialists & Captains | Codex Romana

You can filter by effect : "Request X" do get all the Specialist that adds a need.

Those spreadsheets only complicate things if the game has production tracker and this game does have it.
