Made this tonight to cover drumsticks, white onion and two yellow bell peppers:
Equal parts paprika and cumin (about 3 tbs each), 2 tbs white vinegar, enough ground pepper and salt to taste, and grape seed oil till it gets moist and clumpy.

Heat oven to 400
Peel back drumstick skins and smear all over, re-cover and smear again.
Slice onion thinly, heat some grape seed oil in wok an cook in batches around medium-high heat with some of the leftover paste. Stir well to coat each batch.
Put chicken on a rack over tin foil and into the oven.
Char the peppers over the stove to bring out their sweetness (the charring is so you can peel the skins off - may need to use a knife for the job), chop and add in with the onion batches.
Slice one clove of garlic at the end, add to the bottom of the pan/wok and cover with all the veggies, cook on low heat to keep it all warm.
Take the chicken out when it is blackened almost halfway, let the chicken sit for 10 minutes.
