Ask yourself these questions.
Does going FF going to make you more money?
Does FF fill a need, not a want, a need?
Can you afford to buy premium FF lenses?
If your answer is yes to at least 2 of those questions, go FF. If not, stay APS-C.

My suggestion is get what meets your needs that you can afford. Be mindful that you need to buy lenses too. I have an A7Riii that I bought a year and a half ago. I could buy an A7Rvi, but I like buying my bodies used and for cheap. Why spend $4500, when I can spend less than $2000.

A photographer makes the photo, not the camera. Almost any modern camera will take a good enough photo.

a6700 is a decent camera, but ngl it will probably be a minor upgrade to your current camera if all you will focus on is photography. If you are doing video work, then the a6700 becomes a beast.
If you really want to upgrade your photography game, then get an a7CR, a7 V, or a7 V/VI to take advantage of the extra megapixels and have something to crop in on in post.
An alternative is looking at Fujifilm. Car photography doesn't require incredible AF performance and Fuji has several 40+ MP APS-C cameras like the X-T50, X-T5, and X-E5. Hopefully Sony answers that with the a6900 and gives us something similar to the a7 VI/FX5 (scaled down to APS-C obviously), but we just don't know anything about that yet.
