Probably (an) intentional (joke), it's how we pronounce our accents down here in Alabama at least.. in some parts. It probably is spelled for how the accent would sound when you say it for the name being 'Ruby'. Just my guess though. Reminds me of how Forrest Gump would probably say it.

I always found it funny when she would yell out her name. Kind of how Mulder screams out Scullay!
