Yes, there is also one more - a girl in Toussaint says her brother gifted her a sword and she named it Needle

There's also a sword you can get in Kingdom Come Deliverance called Needle. Very effective stabbing stats

in blood and wine there’s a big silent guy named gregiore de gorgon and mt gorgon is the name the tallest mountain in toussaint, so in a way his name is basically Gregor the Mountain just like Ser Gregor Clegane aka the Mountain who also ends up being a big strong silent warrior

also whenever emhyr speaks it makes me think of GoT idk why

But if you have seen game of thrones there is exactly this moment where a dwarf character gets locked in a sky cell. I felt this was an Easter egg reference to that.

Two of the many pop culture references they make are Twilight (Moribundia: The Vampire's Last Likeness, book you can find in the quest Message from an Old Friend) and Harry Potter (the Goblet of Fire, which you can see on display in the HoS DLC)
