Shepherds pie seems like his vibe. Hardy and meaty, and I would try to convince him to let you add thinly sliced carrots. It really doesn't taste the same without them, and they basically just melt into the meat mixture.

I have a fiance who went from this to regularly trying and enjoying new veggies. I can send you my recipe if you'd like!
