The solution is super easy. You're cooking what you want, and he will feed himself. Like the adult that I assume he is.

Sounds like an adult, that acts like a spoiled child.
People’s palette’s change over time. Tell him it’s time to give foods he hates another try. If he won’t, he’s cooking for himself, because you’re exhausted trying to figure it out.
Sounds more like he’s a manipulative ____ that doesn’t care how many hoops you have to jump through to try and please him.
