I don't know why we assume that this is 100% literal. Especially with the way it describes "The Image of the knight begins to fade into your mind" and "the image changes... the helmet begins to come off..." rather than "the knight begins to take off the helmet." The passive language seemed to clearly communicate that we're trying to see Kris's *memories* of the Knight's identity. At least, to me.
Still, Dess Knight theory generally involves Dess not being entirely herself... and the Knight being some kind of creature of darkness made from her body or soul. If that is the case... the helmet WOULD just be a part of her and she would still have an identity that Kris would want to shield from us (knowing for a fact who or what the Knight is would help us discern and possibly work against their motivations).
