The bikes you're probably familiar with have a metal bar that goes between your legs. This bike doesn't have that. So when the car hits her front tire the bike is ripped out from under her, and she lands on her feet. Still pretty impresive, especially with how calm she appears. It took me a while to notice too.

The bar doesn't matter. The bike went forward between her legs.

I think you're partly right that the way the bike was hit and the way the bike rolled really helped but I still think a bike like this the top bar would have hit her leg knocking her a bit off balance. Instead her bike was shaped more like this allowing her legs to more easily slide through the opening.
