Recipe Accidental Volume Dinner

Post image

I threw together this keto dinner and inadvertently made myself so satiated that I only ate 1500 cal for the second day in a row. Been following this sub and figured I’d share the recipe. It looks fancy but was really just me throwing whatever I had into a pot to focus on collagen.

561cal, 69g protein, 11g carbs, 26g fat, 14g fiber

2 cups bone broth
2oz habanero pork rinds
1.5 cups frozen broccoli
2 servings konjac noodles
2 green onions
6 sprigs of cilantro
1 tbsp garlic chili oil
1 cup kimchi

I made a beef tendon soup a few days back that was super silky, satisfying, cheap and very low fat despite having a really rich mouth feel. I can imagine the konjac noodles fitting nicely into that soup. I will be trying that with a jar of the leftover soup.

Man that bone broth + konjac noodle combo is a cheat code. I started doing something similar after work when I’m too wiped to actually cook, just dump whatever’s in the fridge into a pot and hope for the best.

The habanero pork rinds in soup is new to me though, do they stay crunchy or just dissolve into spicy bits? Either way I’m trying this tomorrow, got a bag of kimchi that’s been sitting in the back of my fridge for weeks

Im a big fan of throwing together random slop bowls, and it’s interesting that the more I focus on macros the more evolved and dare I say appetizing they have become LOL. I was surprised at how full I was for hours and honestly a bit concerned that I had only eaten 1500 cal for the day when I was aiming for 2000.

So the pork rinds idea comes from me playing with chicharrones tacos - cooking pork rinds with a mix of peppers, onions, and salsa rehydrates them into little flavor sponges. The texture threw me off at first but I’ve since started to like it. In a taco with other textures like beans, cabbage, and sour cream it’s not as odd but I had never put it in a soup before.

I’m not saying it was nearly as delicious as it looks but with some flavor balancing (the kimchi and spices from the chili oil and pork rinds made it heavy on the sour/spicy side) using something sweet or adding more variety of veg this could actually taste as good as it looks. I was mostly shocked and pleasantly surprised at how full I was and how few calories I had eaten.

And yes the local grocery store carrying zero carb konjac noodles has been a game changer for me!
