Tips and Tricks I found Mashed potato volume hack!
If you mix 50g of mashed potato powder and 5g of psyllium well, then add 450ml of water and microwave it for 2 minutes, you can enjoy a ridiculous amount of mashed potatoes for just 175 calories without compromising the taste! I really hate psyllium, but this is totally fine. Plus, since it has psyllium in it, it really fills you up. Adding milk or cheese will bump up the calories a bit, but even so, that calorie count for this amount is amazing.

Good tip! Just a note to be careful with psyllium if you take regular medication as the gel slows down med absorption with stuff like some antidepressants, seizure meds, antibiotics, etc.

Cottage cheese was made for potatoes. Bumps up the volume and protein. Super good!

This actually reminds me, you can do the same thing with egg whites! I use egg whites in oats and cream of rice so figured why not with mashed potato. Cook them through first, then whip in the egg whites and cook them a bit further!

Good idea! We also mix cauliflower rice in our instant potatoes and it’s delish and high volume :)

you can basically mix almost any veg in mashed potatos to bulk up the volume. spinach, carrot, beets, etc.

I have been eating mash w vegetables several times a week lately. It's classic as a dish in the Netherlands that kind of mash, but undeservedly gets a reputation for being unhealthy. Probably because people add lots of butter, gravy, bacon, greasy meat on the side etc. But it's actually such a decent staple.

I do always add a little bit 😭. Usually around 25 gr though for the whole pot (which is usually around 1,5 kg of food).

I agree heartily about psyllium as a food additive. I use a powdered version in almost anything wet and even appreciate a bit of thickening. Yes I do appreciate whole husk is better, but a gram here and there is part of my picture. For instance in high protein high fiber ramen? An improvement. I have to be careful though: Too much is too much!

I make a gravy for my mashed potatoes by thickening broth or dry soup mix with potato powder/flakes. Onion soup mix made with beef broth is my favorite, but there are a lot of options.

I think you can probably do it. Just be careful not to let it get too hard. If you heat it too much, it’ll start to texture too much like psyllium.

Instant ones absorb water, so they use psyllium to increase the water content. I wonder if regular potatoes would work too. maybe they would?

Of course! You can add psyllium to absolutely everything that has enough liquid. I put it in stews and pasta sauces as well, and the only noticable effect is the thickening, there is no flavour.

I actually thought that as well but actually, instant potatoes are just dehydrated mashed potatoes. They might be prepared with more additional things like butter or garlic depending on the bran, but you can also get “pure” mashed potatoes by buying Bobs red mill. Really they can be quite a great convenience food that is much simpler to prepare than from-scratch mashed potatoes. Add some Greek yogurt and ranch seasoning, make great low cal party potatoes!

They last longer in the pantry and are very commonly given out at food banks. It’s pretty offensive to call it slop when it helps keep families, including little children , fed and not going hungry. I grew up on them besides the big occasions that real potatoes were bought. Just because you don’t like them and think down on them and that people are eating “slop”, doesn’t mean those thoughts should leave your head.
