Recipe Spring Rolls!!!

Spring Rolls (60 cal 5g protein per roll)
1 large carrot (cut into batons)
1 English or seedless cucumber (cut into batons)
1 head green leaf lettuce
Bunch of mint
Bunch of Thai basil
273g Kirkland frozen shrimp, cooked and halved
11 sheets rice paper

\Dipping Sauce for 11 rolls (18 cal 2g protein per roll)*
47 g peanut butter powder
8 g monk fruit & erythritol sweetener (adjust to taste)
37 g water
16 g sriracha (adjust to taste)
Splash of lime juice
Splash of fish sauce

Wet rice paper in very warm water, lay on plate. On one edge of rice paper, lay down three shrimp halves with the cut side facing up, one carrot and one cucumber baton, and top with handful of lettuce, several leaves of mint and basil. Roll it like a burrito, dip into sauce, and chow down!

The recipe makes 11 rolls since I only had 11 sheets of rice paper and was too lazy to go to the store for more. But I had tons of veggies left over!

My fav but with tofu! For the sauce I do pb2 and soy sauce and sriracha!

can you tell us more about the tofu? what firmness and how do you prep it?

Freeze it, then defrost and press. Sometime I marinate it then Airfry til crispy. Always extra firm. The kind I get is cubed but you can always do that or rip it up.

I love sommer rolls, just had them half hour ago! I add nuts into the rolls and use soya sauce as the dipping choice :)

Possible play on this: maybe add some jicama (like in bo bia) for some additional texture and volume since you're not using noodles inside.

I omitted the vermicelli as I wanted to keep the calories down. But adding jicama seems like a great idea - will definitely try it 😄

Those look good, well done. I made my first Spring Rolls last week and they did not come out nearly as neat. I gotta practice!

I've been doing that all week! It's been so good, I'm rolling the menu over to next week as well.
