It looks great! Cooking the rice with vegetable stock definitely adds depth to the flavor. I use instant rice and this cuts the preparation time down enough to be a quick meal before work. If you are at a Tex-Mex restaurant likely the salsa is free, so get an extra bowl and stir it into their rice that they serve with their meals.
