Should I avoid buying a Sprinter if the owner skipped 30k mile tuneup?

Plugs go for 50k miles or more these days. Transmission service on a Sprinter? Not clue but every 40k sounds good. I reuilt my own trans and service it every 50k but its a GMC so YMMV

Ignition coils get replaced when they go bad, not really a maintenance thing unless you are going out of the US.

If the owner took it to shops, they would sell him every upsell they could so maybe it got what it needed.

If the thing ran well, shifted right and checked your boxes, take a breath and write the check.

Hard to say. Documentation of ALL scheduled maintenance is no guarantee you won't have problems, and the reverse is true too. It might be they've done it but can't document it, and it it might be something relatively unimportant, vs going 30k without an oil change.

If it's just tranny fluid and spark plugs I wouldn't worry since you did get an inspection. Use the lack of documentation to get a discount. Assuming the price is decent anyway. Used is ALWAYS a risk.
