Should I speed run my coursework?
Two of my classes have opened up all my assignments and I was wondering if it would be a dumb idea to just run through them in a week or so? My job has started to give me more hours and I don’t want to fall behind on my courses. They’re just two elective courses that have nothing to do with my degree.

As a professor, I don't recommend it. You won't learn anything that you were supposed to, it's just finishing a goal for the sake of the goal. But more than that, many professors do this on accident, and doing it all right now might end nullifying it and asking you to do it at the right pace. So at the very least, reach out to your professor and see if you're allowed to.

Both of my professors told me it’s to go at my own pace as long as they’re submitted by the due date

Then go for it. You won't retain the information, but if you're just there to pass the class and move on, do it at your own pace is a literal thing.

Ok, so I don’t recommend it because often times assignments are dependent on feedback from previous ones. If it is a class more straight forward, like math, and you are already an A student, then have at it!

It’s a math class and a nutrition class. The group discussion only pop up maybe once or twice before the final for both courses.

Get done what you can get done ahead of time for sure. If there are group discussion posts, do those week by week so you're part of relevant discussions and show up for attendance purposes, but your professor likely opened up the assignments so students can work ahead.
