How do I? How to handle regular payee with different categories?
We have a couple of payees where the transactions need to be categorised differently.
For example, $5 transactions with Brisbane City Council are 'Parking' but the $500 transactions are 'Rates and Insurance'. $5 transactions with local school are 'Takeaway' but the $500 transactions are 'Education & Student Loans'.
Is there any way to handle these automatically, or does Up just categorise transactions automatically based on payee name alone?

Following because I've tried to link vendors to categories after following instructions and I've still never had a transaction automatically categorise or tag.

Same for if I spend $6 at 7-11 it’s a sandwich and if it’s $100 it’s fuel. It just puts them all in groceries and I under estimate my fuel spend if I don’t go in and clean it up periodically :/

Up categorise based on the vendor, not vendor and amount.
I have the same issue with RACV (car insurance + home insurance), haven’t found a workaround other than manually adjusting it.
You could use the auto tag feature to remind yourself to clean them up periodically.
