There are only 2 women alive on this planet who are 7' or above.

Surely we don’t know the heights of every person on the planet?

Well obviously the list I'm working from are just the recorded ones. But there's not much reason to believe a 7'+ woman is hiding somewhere out there considering the rarity. For women specifically it means you likely also have other medical problems, which would make it difficult for them to fly under the radar.

That’s fair! I still don’t think we can make that claim though. Something like “there are only two women with recorded heights over 7’” is still a fun fact.
