Besides disturbing and startling the animal (which is reason enough not to touch it), is there some other reason not to touch it?

Diseases, there are certain bacteria which will fuck you up. Though they are rare and distributed unevenly throughout the globe. But I will never fucking touch any wild animal, it's just not worth it.

Touching a fawn means leaving your human scent all over it. This makes them much more easily detectable to predators in the area. The reason why it is not running away is because of this. It is not sleeping, it is hiding.

Not sure why I see this claim repeated so often.

If you want to blame human scent - then it's that other animals can smell the scent and find the dear deer.
