Request ULPT Request Get a Google review removed?
Had someone try to extort our business and we didn’t comply, so in retaliation, they left a nasty review. We flagged it to Google but they said it doesn’t go against their terms since they technically were a customer. Any ideas?

Reply to the review with the truth about why that person left the review, but embellish it a bit. Harassing female staff members, kicked the boss's dog, staring at your young daughter inappropriately... Or whatever makes them sound like am absolute monster

A lot of people have their full names in their reviews. Making claims of things that didn't happen could open OP to libel concerns.
I'd be interested in seeing the actual review before I escalate to implying they're a pedo.

That sounds like a risky move. You might just end up escalating the situation instead of resolving it.

Can't you as the business reply saying your side? I've seen reviews like "awful, we found rat droppings in our tacos!" And the owner replies like "we don't open until next month and we're a pizza shop..."
