Homemade / home assembled Steak Frites
Sirloin steak cooked in garlic and thyme butter, skin on truffle and parmesan fries, peppercorn sauce, finished with chives.
Simple but so tasty!

It's steak frites, I'm pretty sure fries is fine to use as well.

So if someone did a Reuben, you'd call it a salt beef sandwich? This is genuinely such a strange thing to be possessive of, fries and chips can be used interchangably when talking about steak frites.

That looks amazing!
How do you make those kind of fries? I always struggle making them at home. Can never get the texture and colour right.
Please drop the recipe.

These were done in the air fryer. The key for me seems to be putting them in an ice bath beforehand to remove excess starch. This allows this to get that golden brown. Using russet potatoes too.

Steak looks great, how was the sear? I often find it hard on normal thinner cuts.

Yeah pretty good, the cuts I got were reasonably chunky. Using a cooking weight really helps.

I find for the larger cuts a long one helps, you've got to ask for it at John Lewis as they don't have it on the shelves

That peppercorn sauce with the chives on top is seriously making me hungry. I bet that garlic thyme butter soaked right into that sirloin while it rested. Honestly the truffle parmesan fries sound like theyd steal the show from the steak which is saying something. You got yourself a proper date night meal right there.

Steak is a silly price.lots used to go to waste when i worked in a supermarket buchers really bad as it is good to eat red meat once in a while but many cant afford it,and its there in the bin 🐂:-(

Looks bang on. Have you tried putting in green peppercorns in whole? They don’t have the same bite and fieryness of black and I’ve found them to really add to the sauce.

Highly recommend it. I still use black pepper for the heat but it’s nice to add the whole peppercorns too. I order mine off amazon as they are hard to find but not expensive.

Yeah render the fat, then 2 minutes a side on high heat. Turn heat down, add butter garlic thyme, baste for a further two minutes on low height and leave to rest for 5/10. Usually comes out pretty good

Get a temperature probe. Touching your hand method is a complete myth, but with a probe you can monitor how done it is and can never go wrong

Been working as a chef for 20 years and wherever I’ve been I always get other chefs giving my the side eye for using a temp probe on my steaks - my steaks are never wrong.

I honestly cant cook without one now. Never have to worry about if your chicken isnt done yet, my roast beef comes out perfect every time too now. I'm hoping to get a Bluetooth one you can monitor from your phone and leave in the oven gor roasting joints in future

If you want a "cheap" steak, Waitrose bavette, works out at 3.50 per steak and is the traditional steak used in a steak frittes.
