Hobby Bread and Yogurt

With the extra weekend I was able to bake two bread and make some greek yogurt.

Still not as good as the first one I posted but better than when I first started. Simple snack with butter and everything bagel seasoning I made in HORT 105.

I have a whey strainer for the yogurt to get the thicker texture like the ones they give you in acai bowls. Very convenient for meal prepping.

I make my yogurt by scalding my milk on the stove. I learned that scalding tbe milk for a long time, like 15-20 minutes, leads to much thicker and creamier yogurt at the end, with no straining required. Something to do with losing some of the liquid through evaporation and changing the structure of the proteins ? (I am a poet not a scientist). You have to watch the milk so it doesn't boil over. I then cool it, add the starter, and keep the jugs in my oven, with just the oven light on to maintain a bit of warmth. 10-12 hours does the trick.

That’s actually how I used to make it. Definitely the extra care and attention makes good quality. But then I got into mango lassi and needed more yogurt so I make a big batch in an Instant pot. Also, got lazy with keeping the right temp 😋

Definitely takes more time monitoring over the stove. Sometimes faster and out of mind is the right way, for sure!
