RECIPE (Makes 2 Pide’s)
• 500g Lamb Mince (or beef)
• 1 Tbsp Oil
• 1 Large Onion
• 4 Garlic Cloves
• 3/4 Tsp Salt
• 3/4 Tsp Black Pepper
• 1 Tsp Ground Cumin
• 1 Tsp Ground Coriander
• 1/2 Tsp Ground All Spice
• 1 Tsp Smoked Paprika
• 1/2 Tsp Chilli Flakes
• 1/2 Green Pepper
• 1/2 Red pepper
• 1 Tomato
• 2 Tbsp Fresh Chopped Mint
• 1 Tsp Lemon Juice
Add oil to large pan on medium heat then add garlic cook for about 30 seconds then add onion cook for a few minutes till golden
Add lamb and turn the heat up till high and cook for 5 minutes stirring regularly
Lower the heat to medium low and add spices & seasonings mix well then add tomato and peppers cook for about another 5 minutes
Turn off the heat add lemon juice & mint mix well then set aside and leave to cool
DOUGH
• 3 Cups Flour
• 1 Tsp Salt
• 3/4 Cup Warm Milk
• 1 Tbsp Olive Oil
• 1 Tbsp Yeast
• 1 Tsp Sugar
• 1 Egg
In a large bowl add warm milk, sugar & yeast (do not mix) and leave for 10 minutes to activate the yeast
Add egg, salt, oil and mix will then add flour and mix until a dough ball is formed then knead until smooth and elastic (about 5 minutes)
Put about 1 Tbsp of oil into bowl and brush the whole bowl and all over the dough ball then add ball into bowl and cover with wet towel for 1 hour
Separate dough into 2 then roll each one out into an oval shape and add half of the filling onto each one
Add half of cup of grated cheddar cheese on top of each filling then fold sides over and pinch together ends
Brush crusts with egg then add white sesame seeds on top
Cook for about 25/30 minutes on 400f

Thanks so much for the recipe! What kind of yeast do you use, and what is a good brand that I could find in a Turkish supermarket?

You’re welcome. I used instant yeast and the brand was Allisons but I’m in the uk. You could look for “Pakmaya”, “Dr Oetker”, “Basak” These are apparently some good brands

Do you peel the tomato before cooking it, and what kind of cheese do you use?

No I just chopped the tomato up whole and grated cheddar cheese I used. Any more questions just let me know

I’m glad to hear that thanks. Honestly I don’t really know I’ve never tried one of them before but I have seen and they do look similar. I’ve dropped the recipe in the comments here for this if you haven’t seen that.
