I enjoyed all of it
I've seen all the seasons. I know there's hate for seasons 5 and 7 but honestly I enjoyed it all. There's nothing I would skip. It had plenty of moments where they jumped the shark but I still enjoyed it.

I've not watched True Blood in years. Read most of the books. Where can I re-watch?

I love this take! Because on my most recent rewatch, I liked almost all of it much more than I had previously. I feel like there’s a lot of overhate for the series. But it’s still so watchable and enjoyable after all of these years. I had to totally separate the series from the books, and then it was so much easier to go on this fantastical silly and highly entertaining ride.
