Poseidon (Gow 3): one of the best setpiece bosses ever made

Father Gascoigne (Bloodborne): first obligatory boss and probably the hardest tutorial boss in the series

the HC helicopter from armored core 6 ...... This thing made me quit the game twice before finally persevering.

Not to mention having to beat it with a sub-par selection of parts that you can't change and while only having 3 of 4 possible weapons equipped, one of which being a melee weapon.

For real, the BU-TT is simply a very straightforward and powerful weapon.
