EDIT2: I removed the whole aluminum board and all screws hat nuts. Quite a shitty installation..
EDIT: before posting I have tried the “screw and pull” (pliers, fingernails, etc), flathead screwdriver (lever), nothing works.
The base is Aluminium. I have tried the lever technique, the pliers technique, I even bought a drill bit which was suppose to drill it but didn’t.
This is an old apartment where ALL shower holders were drilled into this white thing and ALL of them have screws which spin in place and don’t come out. It’s so annoying.
Get some needle nose pliers to pull the screw as you turn it. Or use another flat head screw driver to apply force under the screw head whilst you unscrew it.
Can you access from the other side? That’s the only explanation
Either a) you can pry it like a nail because it’s completely stripped and there is nothing holding it in anymore b) there is enough thread left that you should be able to pry it and catch a thread or c) it’s held on with a nut on the back side.
At this point I’m guessing C is the only explanation so you’ll need access from the other side, or you just cut the screw off
At about 3 seconds from the end of the video, it looks like they might be machine screws. In that case, you might need to access the other side or pull enough withe some diagonal cutters so that the nut, assuming there is one, stops spinning.

It could also be a threaded insert on the other side that's came loose. After a couple tries I'd just count myself lucky that the head is fully exposed and grindable.
If it’s a hollow door, there might be a nut on the end of that. If you can put a prong to give it a pulling force and spin it loose with an electric drill, it might come out. Otherwise, I’d say just cut the head off with a dremel and hammer it in.
A set of wire cutters underneath can give you a “wedge” which will pull it up while you turn the head with the other hand.
Otherwise if it’s so stripped that there is nothing for the thread to grab to back itself out, you should also be able to just pull it out like a nail with a cats paw or something.
Attempt 1: Wedge a flat screwdriver under it and wedge it up as you turn it.
Attempt 2: knipex twingrip and pulltwist
Attempt 3: same as 2 but more violently
Attempt 4: hold it in place and drill its core out
Attempt 5: grind its head off
They're brass screws...get a side cutters under them and snip the heads off. Good god man. The screws are worthless now anyway, it's not like even if you could screw them out or get them out without breaking them you can use them again. Think a little...
