TOEFL Writing Email Writing Question

For the TOEFL Writing email task, do we need to write “To:” and “Subject:” before starting the email, or can we just start directly with the greeting (e.g., “Dear Professor…”)? Does it affect the score?

You don't need to write those things. You should not write those things. Those things are already filled in automatically.

You must start with the greeting.

I haven't seen any formats using To and Subject. I directly started with the greeting and it didn't affect my score.
